Look. It has been A Year. And, sure, you might be thinking that, after the hellfire of 2020, that going without anything that brings you little pleasure is the kind of masochism you simply do not need. But, here's the thing. If you do want to try Veganuary – for the animals, for the planet, to simply shake up your routine – then know that it can be abundant in delicious, nourishing and deeply satisfying meals.
Veganuary, in case you missed it, is an annual challenge in which the curious embrace the plant-powered way for 31 days. This year, over 400,000 people signed up, says the non-profit who run the initiative – a dramatic uptick on the 250,000 in 2019.
