About Whole Wheat Bread Recipe

Whole wheat bread is made using wholemeal flour, yeast, honey and water. Sometimes eggs or other ingredients are used. I am sharing three version of whole wheat bread in this post.

You all know my love for baking bread at home from my array of bread post in my blog. So far i have tried 100% Whole Wheat Bread, White Bread, Multi Grain Bread. And i went a little fancy and made a Homemade Panettone & Focaccia Bread. So far everything turned out so beautiful and they all been my favorite ones.

100% Wheat Bread with no Maida

Whole Wheat Bread are my absolute favourite. But store bought breads have maida in them and they are never made with whole wheat flour. I already have a wheat bread recipe, but this is another version which is more fluffier than that..

I have tried so many bread recipes so far. This is a wheat bread which i made few weeks back, i used eggs in them. The texture of the bread was so perfect. It was soft inside and has a perfect crust.

How to Make Best Wheat Bread at Home

I have made so many version of bread in my blog, so far this is the best whole wheat bread i have ever made. It is sturdy enough, slices perfectly and has a great texture and flavour to it. I specially love this bread when it is toasted, used this in myavocado toast recipe.

This was a very huge loaf of bread which was enough for our whole family for a week. We have one slice of bread which we toast in a toaster and spread some jams or any toppings and have it.

Since it is a huge slice, only one is enough for us and it makes us pretty full. I would suggest eating this for breakfast along with some fruits and a glass of milk. Sure that it is a healthy option than having regular white bread.

This bread was my experiment, i just measured my own ingredients and baked this. Just look at those texture, very porous and spongy like. It turned out to be perfection. Now this recipe is going to be in my repitore. Going to enjoy this for a few days.This is so easy to make as well and it makes the perfect toast or taste just delicious when spread with some jam or preserves over it when sliced fresh from the loaf.

Ingredients

Whole Wheat Bread with Eggs

  • 3 cups Wheat flour
  • 1 cup Warm Water + more as needed
  • 2 tbsp Honey
  • 1.5 tsp Salt
  • 3 tsp Dry Yeast
  • 1 Egg
  • 3 tbsp Vegetable Oil

Whole Wheat Bread Recipe (with milk)

  • 4 cups Whole Wheat Flour (480 grams)
  • cup Dry Milk Powder or Milk Powder (40 grams)
  • 2 tsp Salt
  • 3 tbsp Oil
  • 2 tsp Dry Yeast
  • ¼ cup Honey
  • 1⅓ cup Warm Water (320 ml)
  • 1 tsp Sugar

Whole Wheat Bread (vital gluten)

  • 3 cups Whole Wheat Flour (+ 1 cup)
  • 2 tsp Dry Yeast
  • 2 tbsp Vital wheat gluten
  • 1.5 tsp Salt
  • 1 tbsp Honey
  • cup Warm Water
  • 1 tsp Olive Oil

Instructions

Whole Wheat Bread with Eggs

  • Take warm water in a bowl, add honey and yeast. Mix well and let it sit for 5 mins.

  • Now take flour, salt in a bowl and mix well. Add oil and mix well.

  • Add in yeast mix and knead to a dough.

  • Now take it in a dusted flour and knead for 10 mins till smooth.

  • Cover and leave to rise for 1 to 2 hours.

  • Punch out the air and shape it into a log like and roll it to form a loaf.

  • Place it in a loaf pan and let it rise for 45 mins to 1 hour.

  • During the last 10 mins of rising, preheat oven to 190 degree C.

  • Now pop it in oven and bake for 30 to 35 mins.

  • Remove and cool completely.

  • Slice and serve.

Whole Wheat Bread Recipe (with milk)

  • Take yeast and sugar in a bowl, add in ⅓ cup of warm water over it, mix well and let it sit and activate till it is bubbly.

  • Take flour, milk powder, salt in a bowl and mix well.

  • Make a well in the centre and add in the yeast mix, honey, oil and more water. Knead this to a soft dough. You have to knead this for a good 5 to 7 mins.

  • Now oil the dough lightly, cover it with plastic wrap and let it rise for an hour or two till it is doubled in size.

  • Now take the dough and knead it well. Flatten it to the size of the loaf pan.

  • Start rolling and pinch the edges. Now put this seamed side down in the loaf pan and cover it with plastic wrap. Let it rise for 45 mins or so.

  • During the last 10 mins or rising, preheat oven to 170 degree C. Oil the 9x5 inch loaf pan lightly with oil.

  • Now Put this in oven and bake for 45 mins.

  • Remove it and let it cool for 15 mins in the pan, remove it from pan and cool it completely. Slice and serve.

Whole Wheat Bread (vital gluten)

  • Grease a loaf pan with oil and set aside.

  • Take yeast in a bowl, add in ¼ cup of warm water and honey. Let it rest for 5 mins till it gets activated,

  • Now take wheat flour, gluten, salt in a bowl and mix well. Add yeast water and remaining water little by little and make into a soft dough. Now add little oil and apply all over it. Let it rest for 1 hour till it doubles in size.

  • Now sprinkle flour all over the work surface and tip the dough in it. Now knead this really really well till it get soft. Add more flour as needed.

  • Now spread it like a rectangle and start rolling. Seal the edges. Now invert it and place it in the pan. Let it rise for 30 to 45 mins.

  • During the last 15 mins or rising,preheat oven to 200 degree C.

  • Pop the pan in oven andbake for 15 mins. Nowreduce the temperature to 180 degree Cand bake foranother 20 to 25 mins.

  • Now remove it from oven and immediately un mould. Let it cool in a cooling rack completely. Slice and serve.

Notes

1)Activating yeast before adding is important. The yeast should turn foamy. Then add it to the flour. If the yeast didn't foam up then dont add it to flour. The dough wont rise.

2) If you use instant yeast, then you can add it straight to the wheat flour. Dont need to activate it separately.

3)Don't over bake it, if you do then the bread will get hard.

4)You can add honey instead of sugar.

Version 3: Whole Wheat Bread with Milk

Since we have started dieting, we have been trying to eat healthy and low fat dishes. One of my all time life saver is wheat bread. We enjoy it during morning, it is perfect. But in my place, the bread which we get as brown bread or wheat bread has all purpose flour added in them to make it soft. So we are kind of staying away from it.

How to Make Healthy Wholemeal Bread

Now coming to the recipe of the day. It is a healthy one which many of you must have never thought of making this at home. Yes it is a very very healthy whole wheat bread with no addition of maida (all purpose flour) to it. You might think that now we can find so many wheat breads out in the markets, why would spend time making it at home. But let me tell you a secret.

The bread which you find in store have some maida added to it. I am not talking about the specially made bread which you find in big supermarkets. But most of them have maida added to it. So if you want a healthier option and need a good whole wheat bread them try this out..

Tips & Tricks

How to Activate Yeast?

  • Take warm water in a bowl. Use Luke warm water. Dip your finger in the water and it should be very warm. Just like a warm bath water.
  • sprinkle little sweetness like sugar, honey. Because yeast loves warm and sweet environment.
  • now sprinkle yeast over it. I use dry yeast.
  • leave aside for 5 mins to activate. The yeast mix should be bubbly and foamy. This means yeast is activated.

If your mixture doesn’t look foamy.

1)Then you must have added yeast to too hot water so the yeast has died.

2)You have used cold water so yeast didn’t activated.

3)Your yeast is expired. Always store yeast in freezer in an air right container.
